ligonberrys are fresh currents. the jam is delicious (you can usually find it at fancy food stores) on top of swedish pancakes, which are like crepes but super easy to make.
1/2 cup flour
1/2 cup milk
2 eggs
pinch of nutmeg
4 T. butter
2 T. powdered sugar
juice of 1/2 lemon
instructions:
beat eggs. mix together eggs, flour, milk and nutmeg. melt butter in ovenproof 10″ skillet. pour batter into skillet with melted margarine. bake at 425 degrees for 15-20 minutes. remove from oven and sprinkle with powdered sugar. return to oven and bake briefly. remove from oven and sprinkle with lemon juice. cut pancake into 4-6 pie shaped pieces. pass lingonberry sauce!!
