The article points out that it’s the nitrites in bacon that give you the cancer…it doesn’t point out that most of the good cured meats (prosciutto, jamon, bresaola, high quality bacon, speck, etc) do not have nitrites in them. Only the ghetto processed shit does.
So, eat away, just steer clear of the janky cured meats…shit you probably shouldn’t eat those anyway as they taste like man-ass in comparison to the real deal.

Organic meats do taste better, but what do you think they serve you when you order a bacon, egg and death sammich from the deli? I just had some organic chicken skin for lunch. I’m totally serious. Just the skin.
